You keep it as long as every old address leads to its new page. That's what the redirects do, and we set them on all of them. On our own website's migration, that's how all 54 addresses Google had went through.
The old site stays up while we lift the copy onto the new host. We switch only when the copy is ready, at the hour you pick, and through all this the person coming in keeps seeing a site that works.

They stay where they are, unless you ask otherwise: the migration touches the site, and the mailboxes are a different thing. When you want the emails moved too, say so at the brief and they go into the offer as a separate row.
Move it as it is when the copy and the structure still work for you and only the host presses on you. When it looks old or you can no longer edit it, you go on the rebuild, which also happens on the same address.
